Recipe of the Month
Apple Cake - Submitted by Naomi Goldenberg
Ingredients
2 c sugar
1/2 c shortening
4 eggs
2-1/2 t vanilla
3 c flour
3 t baking powder
1/2 t salt
1 c orange juice
sugar and cinnamon mixture
4 apples (Granny Smith, Golden Delicious or both), peeled and thinly sliced
Preheat oven to 350. Cream shortening and sugar. Add eggs and vanilla. Combine dry ingredients and add to shortening mixture, alternating with orange juice. Place cinnamon and sugar in a large plastic bag. Add apples and shake to coat. Pour half the batter into a greased 9 X 13" pan. Layer apples over batter. Cover apples with remaining batter. Sprinkle with cinnamon and sugar mixture. Bake for 45 minutes, or until toothpick inserted in middle comes out clean.
